Google confirms that Jørgen Strand Larsen’s parents are Atle and Vibeke Strand Larsen.

If 'Mountbatten' were a double-barreled surname, then why wouldn't the other Royals use it? e.g. King Charles Mountbatten Windsor III

I don't know the answer to this anomaly, juts observing that the timing to start calling him by his middle name seems odd.

ex Tory leader Iain Duncan Smith - Duncan is supposedly one of his middle names. He also added the extra i to Iain later in life.

Clearly being boring Ian Smith wouldn't cut it.

As you say, I suspect he and his advisors felt 'Ian Smith' sounded dull.

The addition of Duncan added a certain 'gravitas' for a potential prime minister.

The point being, there was a reason, a reason and a timing to why that was done. There almost always is.

The question to ask ourselves is what is the reason in this case. I can think of a few myself.
If I am being charitable the best reason for him is that the name Mountbatten comes with a military heritage and he wishes to emphasise that. Although the spanner in the wheel is that it appears other people appear to have added the name Mountbatten on his behalf.
